Easy Instant Pot Bone Broth

Ingredients:
bones of one whole chicken
1 onion, quartered
2 garlic cloves
1-2 carrots, chopped
1 tsp. salt (I like pink Himalayan salt)
1 TBsp. apple cider vinegar
fresh herbs, including rosemary, thyme, sage, etc. (I use whatever I have in the garden.)
Directions:
Place chicken bones in Instant Pot and cover with water to one inch below the max fill line.
Add onion, garlic, carrots, salt, vinegar, and herbs.
Check to make sure the sealing ring is in place and the pressure valve is sealed. Set the Instant Pot to pressure cook for at least 120 minutes, the longer the better.
When the Instant Pot has completed cooking, release pressure naturally.
Use a strainer to strain the cooked broth into a large container and dispose of bones and cooked vegetables.
Refrigerate or freeze broth to use in soups, stews, rice, or anything else that can use a boost of protein and flavor. I recommend freezing in muffin tins to be used as needed.
Note: If you can find chicken feet in your local market, add them to the Instant Pot when you add the bones. They're full of amino acids and collagen that only make the bone broth better for you!
